Slow Cook Minestrone Soup
Cooking Instructions:
- In a 2-gallon pot begin by cooking onions, garlic, celery and carrots until tender.
- Add salt, pepper and chopped tomatoes to pan.
- Bring to a boil and add vegetable stock, thyme and beans to pot.
- Select slow cook setting at 300 degrees. Cover and place in oven for 1 hour.
- Remove from oven and add ditalini pasta to soup.
- Place back in slow cook oven for 30 minutes.
- Remove from oven and serve with toasted bread.
INGREDIENTS:
- 1 cup carrots
- 1 cup celery
- 1 cup onions
- 2 cups chopped tomatoes
- 2 cups vegetable broth
- 1 lb dry ditalini pasta
- ½ cup white beans or 1 cup canned
- ½ cup red beans or 1 cup canned
- 2 tbsp chopped thyme
- 2 tbsp garlic
- 2 tbsp olive oil
- salt and pepper
